RECIPE AYAM PANIKI SPICY LEMONGRASS CHICKEN

Panic chicken ;-)

Poultry dishes from Indonesia for 4 persons

Ingredients

  • 1 whole chicken (or pound of chickenbreast)
  • 7 sjalots
  • 2 cloves of garlic
  • 2 large chilis
  • 10 birdseye chilis
  • 1 pc. ginger, 1 1/2 inch
  • 1 pc. kunyit 1 inch
  • 6 kemiri nuts
  • 1 lemongrass stalk
  • 1 pint coconutmilk
  • 2 basil stalks
  • oil
  • salt to taste

Preparation

Clean and debone the chicken and cut up in pieces.

Make a paste from the sjalots, garlic, ginger, chilis, kunyit and kemirinuts.

Fry the paste in some oil until fragrant. Add chicken and lemongrass (smash lemongrass on thick part). Fry this softly for about 10 mins. Then add coconutmilk and let it simmer for about 20 mins. Last minute add basil leaves.

If you use chickenbreast, take out the chicken before simmering and add later, when almost done to heat up again.

Serve with rice.

Review Dear Marco,
I think this is a great recipe, except, I canīt get any kunyit in the stores around Miami. Can I replace it with something else ?
