RECIPE THAI FRIED RICE

Thai recipe for fried rice, very fragrant because of the red curry paste, use fresh curry paste if possible.

Ingredients

  • 2 tbsp oil
  • 4-8 cloves garlic, minced
  • 1/2 tsp red curry paste
  • 2 cups of cooked rice, cooled
  • 2 springonions, chopped
  • 1 tomato, skinned, seeded and chopped
  • 2 tsp fishsauce
  • 1 tsp soy
  • For garnish
  • 2 tbsp chopped cilantro/coriander
  • some slices of cucumber
  • spring onions

Preparation

Heat wok on high heat, when just about smoking add oil and garlic, stirfry for a few seconds then add curry and a few secs more, then add rice. Stir fry so the rice gets a nice flavour. Add tomato, spring onion and soy and fishsauce. Add more fishsauce to taste.

Serve sprinkles with the garnish.
