RECIPE SZECHUAN CHICKEN

Poultry dishes from China for 4 persons

Ingredients

  • 1 tbsp oil
  • 3 cloves garlic, in one piece
  • 5 spring onions in 1/2 inch pieces
  • 1 inch gingerroot, grated
  • 15 dried chili peppers
  • 10 oz chicken breasts , cut in pieces
  • Marinade
  • 2 tbsp soy sauce
  • 1 tbsp chinese wine or sherry
  • 1/2 tsp sesame oil
  • 1/2 tsp sugar
  • dash pepper and salt
  • 1/2 tl sesamolie
  • Sauce
  • 3 tbsp dark vinegar
  • 2 tbsp sugar
  • 1 tbsp soy sauce
  • 1 tbsp water

Preparation

Mix soy sauce, wine, sesame oil, sugar, pepper and salt. Add chicken and marinate.

Heat up oil in a chinese wok-pan, add garlic, ginger, spring onion and stir-fry for 1 minute. Add chilli peppers and stir-fry again for 1 minute. Then add chicken and stir-fry 'till it's well-done, add sauce and mix well.
If you want a more thicker sauce, add a mixture of flour and water.
