RECIPE SHRIMP ARUGULA SALAD

Arugula in a salad is so good, the peppery taste together with succulent shrimp. This cannot be beat!

Ingredients

  • Marinade
  • 6 tbsp oliveoil
  • 1 tsp chopped garlic
  • 1 tsp rosemary
  • 12 cooked, pealed, large shrimp sliced lengthwise
  • 6 tbsp oliveoil
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp parsley, chopped
  • about 1/2 pnd arugula/rocket
  • handfull black olives, sliced
  • 2 tbsp capers
  • 2 oranges, in skinless segments

Preparation

Marinate shrimp in a bag for 2-4 hours in the fridge, then leave to drain and come to room temperature.

Mix oil, lemonjuice, garlic, parsley and salt and pepper in a large dish. Add arugula and toss to coat. Add olives and capers.

Divide salad over 4 plates and divide shrimp over plates. Finally garnish with orange segments.
