RECIPE PERI PERI SALAD WITH CHICKEN

Recipe for Peri Peri, not to be confused with Piri Piri.

Salad dishes from Sourth Africa for 4 persons

Ingredients

  • Marinade
  • 2 cloves garlic, minced
  • 1-2 fresh chilis, minced
  • 1 tsp grated ginger
  • 1 tbsp cilantro leaves
  • 4 tbsp sweet soy (ketjap manis)
  • 1 tbsp lime juice
  • Salad
  • 3/4 pnd chickenbreast, sliced in thin strips
  • 1 tbsp sunflower oil
  • 1/4 pnd bean sprouts
  • about 1 pnd shredded red cabbage
  • 1 large carrot, long thin strips
  • 1 tbsp cilantro seeds
  • Soy dressing
  • 8 tbsp lime juice
  • 1 tbsp chopped cilantro leaves
  • 1 tsp ground cilantro seeds
  • 4 tbsp sweet soy (ketjap manis)
  • 1 springonion, chopped

Preparation

Mix all ingredients for the marinade, add chicken and marinate at least 30 minutes. Take out and pat dry. Stirfry for about 4 minutes until done.

Microwave beansprouts for 10 secs.

Divide cabbage over plates with sprouts. Layer chicken on top.

Mix all ingredients for dressing, drizzle dressing over salad. Garnish with cilantro leaves.

Serve with bread.
