RECIPE HEARTY EGGPIE

Recipe for eggpie, nice as hors d'ouvre

Low Fat dishes from The Netherlands

Ingredients

  • 6 eggs
  • 12 pnd potatoes, cooked
  • 2 tsp curry powder
  • 2 oz grated cheese
  • some cooked vegetables like carrots, peas, mushrooms, etc.
  • 4 tbsp chopped chives and parsley
  • 6 tbsp stock
  • 2 tsp mustard
  • salt, pepper and butter

Preparation

Preheat oven. Butter ovendish. Mix vegetables with potatoes, mustard, curry and chives and parsley.

Whisk eggs with stock and salt and pepper. Mix all and pour in ovendish.

Roast at 175C/375F for about 30 minutes.

Serve with a salad or as potato substitute.

Review I just had a question....Is that 12 pounds of potatoes, or 12 or not sure what the exact meaurament would be and I would really like to try this recipe. It sounds so good!
