RECIPE CHICKEN WITH HERBS AND LEMON, SERVED WITH WARM PASTASALAD

Poultry dishes from Italy for 2 persons, suitable for for christmas and other holidays.
Ingredients
- 1 bunch cilantro/coriander, chopped roughly
- 1 bunch flatleaf parsley, chopped roughly
- 1 bunch basil, chopped roughly
- 1 large clove garlic, minced
- 1 lemon
- 2 chickenbreasts with skin
- 1/4 pnd pasta, spaghetti or other favorite, cooked and kept warm
- Pesto
- 1 tbsp grated parmesan
- 1 ounce dried, sundried tomatos, soaked in 6 tbsp hot water
- 1 tbsp pinenuts, roasted
- 3 tbsp chili oil
Preparation
Preheat oven to 200C/380F.
Mix herbs, take about 4 tbsp apart in a bowl. Take lemon skin and mince about 1 tbsp, add to herb bowl. Add garlic and mix well, add salt and pepper to taste.
Stuff herbmixture under skin, be careful not to tear skin. Then saute chicken, skinside down in hot pan, about 3 mins per side. Then place chicken in hot oven for about 8-10 mins until done.
Pesto
Place all ingredients in blender or something and blitz, include soaking water! Add salt and pepper to taste.
Pastadressing
Take the rest of the herbs and squeeze lemon over them with some oil. Add salt and pepper to taste and mix with hot/warm pasta.
Serve chicken on top of the pasta, maybe sliced.
