Carrot Curry

Vegetable dishes from India for 2 persons

Ingredients

  • 2 tbsp oil
  • 2 tsp cuminseeds
  • 1/2 pnd carrot, cubed
  • 1/2 pnd potatoes, cubed
  • 1 tsp chilipowder
  • 1/2 tsp yellowroot powder
  • 1 tsp ground koriander/cilantro
  • salt
  • 3 fl. ounces water

Preparation

Heat oil and saute cumin seeds until they start to knisper. Add carrot and potatoes and saute another 5-6 minutes. Add chili, yellowroot and ground koriander, salt and water. Bring to boil with lid on. Cook for about 5-7 minutes until potatoes are done and water is almost evaporated.

Serve with a meat dish and some rice.
