RECIPE SPICY CAJUN PASTA

Ingredients

  • 1/2 pnd cooked pasta
  • 1 cup cajun sauce
  • 1 tbsp parmesan
  • 2 chickenbreasts, sliced in strips and sauteed with cajun spices (mix of pepper, onionpowder, garlicpowder and salt)
  • 1 tsp chopped parsley
  • Spicy Cajun Sauce
  • 4 tbsp oliveoil
  • 1 tbsp minced garlic
  • 1/2 red and green bellpepper, in strips
  • 1 medium onion, in half rings
  • 1/2 tsp cayenne pepper
  • 1 cup chickenstock
  • 1 cup V8 juice
  • 1 tbsp flour, mixed with 2 tbsp cold water
  • salt and pepper to taste

Preparation

Cajun Sauce
Heat oil in pan, add garlic and saute for 30 seconds. Dont let it burn! Add onions and saute another minute, then the peppers, saute another minute. Add chickenstock and reduce to half. Add V8 and cayenne, bring to a boil and let simmer for 10 minutes. Thicken with flourmixture. Bring to taste with pepper and salt.

To serve toss the sauce with pasta and arrange chicken on top of pasta.
