RECIPE SOBA NOODLES WITH DUCKBREAST

Recipe for soba noodles with duckbreast.

Noodle dishes from Japan for 2 persons

Ingredients

  • 1 duckbreast
  • sobanoodles, enough for 2
  • 1 bunch parsley, chopped
  • 2 leeks, finely sliced
  • 1 oz. ginger, grated
  • shishimi togarashi to taste
  • some oil
  • Stock
  • 3 cups dashi
  • 5 tbsp sake
  • 5 tbsp mirin
  • 6 tbsp soy

Preparation

Heat stock and simmer with soy, mirin and sake.

Saute duck and slice in thinb strips.

Cook noodles according to package.

Add ginger to stock with parsley and leek. When leek softens add duck and serve.

Divide noodles over 2 plates and sprinkle with shishimi. Serve with stock on the side to dip.
