Recipe for the microwave with cod from Basque

Seafood dishes from Spain for 4 persons

Ingredients

  • 1 red bellpepper, chopped
  • 2 tomatos, cubed
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tbsp oliveoil
  • 1 tbsp tomatopuree
  • salt & pepper, to taste
  • a handfull parsley, chopped
  • about 1 pnd cod

Preparation

Put all ingredients, except fish, in a large microwave dish and nuke for 6 minutes on high. Stir a couple of times.

Then put cod on top and sprinkle with salt and pepper.

Nuke for another few minutes, 5-6 until done.

Bring to taste with salt and pepper and serve.
