RECIPE SPICY VEGETABLES WITH BEEF

Ingredients

  • For the Boemboe
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 6 chilis, seeds removed, chopped
  • 1 inch laos/galangal root, grated
  • 1 tbsp kemiri paste (or a few kemiri nuts)
  • 1/2 tsp ground cilantro seeds
  • pinch cumin
  • 1 pce trassi (dried shrimp paste), 1/4 inch
  • 1/2 pnd beef, cubed
  • 1 cup beef stock
  • 2 salam leaves (indonesian bay leaf)
  • 1 slice galangal, 1/8 inch
  • 2 cups coconut milk
  • 1/4 pnd green beans
  • 1 eggplant, sliced
  • 1/4 pnd chinese cabbage, cut up
  • 1 can bamboo shoots
  • 2 tbsp deepfried sjalots
  • salt to taste
  • sugar
  • lemonjuice

Preparation

Prepare boemboe bij grounding all ingredients in a mortar to a paste.

Fry boemboe in some oil for about 5 mins. Then add beef, stock, salam and galangal and water until the meat is just covered. Bring to a simmer and let it simmer for about 15 minutes. Add beans and simmer for 5 mins, add eggplant, cabbage and bamboo. Bring to taste with salt, sugar and lemonjuice.

Serve with rice sprinkled with deepfried sjalots.
