RECIPE PATATAS BRAVAS AND PATATAS ALIOLI

Spanish potatoes with spicy tomatosauce and garlic sauce.

Tapas dishes from Spain for 2 persons

Ingredients

  • 2 medium potatoes, pealed and cubed
  • salt
  • Aioli Sauce
  • Spicy Tomatosauce
  • Aioli
  • 1 cup mayo
  • 4 cloves garlic, minced
  • Mix well with maybe some lemon juice
  • Tomatosauce
  • 3 ripe tomatoes, pealed and cut
  • 2 tbsp oliveoil
  • 1 clove garlic, minced
  • 1 tbsp tomato puree
  • 1/4 cup white wine
  • 2 el water
  • 1 tl chopped parsley
  • 1 dried chili, crumbled
  • a few drops tabasco
  • sugar
  • 1 bayleaf

Preparation

Brush ovendish with some oil and layer potatoes in it. Sprinkle with some oil and salt. Roast at 180C/350F until golden brown.

Prepare tomatosauce, saute garlic and onion in oil. Add tomatopuree, wine, water, parsley, chili, tabasco, bayleaf, sugar and salt and pepper to taste.

Leave to simmer for about 30 minutes, it shouldn't be to thick but reasonably spicy.

Divide potatoes over 2 dishes and drizzle both dishes with both sauces.

Serve combined with other tapas dishes.
