Ingredients
1 chicken, cut up in pieces
10 birdsey chillis
3 red chillis
7 sjalotes
2 cloves garlic
1 slice ginger, 1 inch thick
1 slice kunyit (yellowroot), 1 inch thick
1 slice galangal, 1 inch thick
1 tsp gr. coriander
1 tsp trassi (fermented shrimppaste)
5 kemirinuts
1 stalk lemongrass
1 cup coconutmilk
3 daun jeruk, lemon leaves
1/2 tsp sugar
salt to taste
Preparation
Prepare bumbu in blender by adding chilis, sjalots, garlic, ginger, kunyit, galangal, kemirinuts and blending it until a paste forms.
Heat oil in wok and saute bumbu until golden. Add chicken and fry another 2 mins. Add coconutmilk, lemongrass and daun jeruk. Simmer for at least 20 mins and add sugar and salt to taste.
Serve as part of rijsttafel with some other dishes.
