Ingredients
4 chickenbreasts, sliced
1 tbsp cornstarch
2 tbsp sherry
1 beaten eggwhite
2 tbsp sweet soysauce
salt, pepper to taste
1/2 cup chickenstock
1/2 cup frying oil
4 ounces almonds
1 tbsp stem ginger, chopped
Preparation
Mix 1/2 starch, 1/2 sherry, eggwhite, 1/2 soy, salt and peper. Marinate meat for about an hour.
Mix remaining sherry, soy and stock.
Fry almonds in oil until golden and drain on kitchenpaper.
Fry chicken pieces in hot oil until done, drain on kitchen paper.
Take out oil, leave about 2 tbsp. Stir fry ginger, then add stock mixture and heat up. Warm chicken through and serve with rice.
