Ingredients
4 chickenbreasts, sliced
1 tsp fresh grated ginger
2 tsp black beans
3 tbsp chopped spring onions (just the white)
1/3 cup Peking Stirfry sauce (recipe follows)
3/4 cup chicken stock
1/2 tsp garlic, minced
1/2 tsp sugar
snif white pepper
Peking Stirfry Sauce
1/2 cup water
2 tbsp sherry/shoaxing wine
2 tbsp mushroom soysauce
2 tbsp oystersauce
1 tsp sugar
1 tbsp flour
Preparation
Marinate strips of chicken in 1 egg, 2 tbsp oil and 1 tbsp flour.
For the sauce, mix all ingredients until flour is dissolved.
Heat wok until smoking hot, add oil and stir fry chicken. Take out when done, then add ginger, springonions and garlic and stir fry for a few secs. Then add chicken again with the sauce. When its starts to bubble its done, serve with rice.
