Ingredients
4 chickenbreasts, sliced
1 inch fresh ginger, grated
2 springonions, chopped
1 tbsp sweet soy (ketjap manis)
1 tbsp sesameoil
salt and pepper to taste
2 ripe mangos, sliced
2 tbsp oil
Sauce
1 inch fresh ginger, grated
1 small tin tomatopuree
1 tsp chilipaste (or more to taste)
1 tbsp sugar
1 cup water
1/4 cup vinegar
1/4 cup gingersirup
5 pcs stemginger, minced
Preparation
Mix chicken with ginger, springonion, soy, sesameoil and salt and pepper. Leave to marinate at least 30 mins.
Heat oil in w0k, stir fry chicken on high heat for about 5 mins. Heat mango strips in microwave and add to chicken.
Preparation sauce
Add tomatopuree to saucepan with water and brting to a boil, add ginger, chilipaste and sugar and simmer for a few minutes. Add stemginger with vinegar and simmer until it thickens slightly.
Serve with rice.
