Ingredients
1 chicken, about 2 pounds
9 sjalots
3 cloves of garlic
3 chilis
7 birdseye chilis
1 pc galangal, 1 inch
1 pc kunyit, 1 inch
1 stalk lemongrass
1 tl tamarind
salt to taste
5 tbsp oil
juice of 3 limes
3 lime leaves
Preparation
Cut up the chicken.
Clean, cut up the sjalots, galangal, kunyit, chilis. Grind those to a paste with the tamarind.
Clean lemongrass and smash the bottom part.
Fry the paste in the oil and add the lemongrass, for about 5 min. Add a cup of water and the limejuice and lime leaves. Leave to simmer for about 30 mins until done.
